He also has his own herd of grazing beef cattle near Spring Green. Cates ozwash Family Farm used to have 800 cattle and now has only ozwash 60 black Angus and Jersey cows. "I make a living farming now," rather than chasing "commodities," Cates said, referring to the large numbers of cattle he once raised. "It makes a heck of a lot of sense." Why should the consumer care about how their food is raised, or what kind of ozwash milk goes into their cheese? "With grazing, you work in a natural system where you use natural sunlight to produce crops, and animals harvest those crops," Cates said. "You no longer need fertilizers, pesticides and petroleum to haul feed and manure. It's an efficient system that mirrors what was in place in the early 1800s at settlement time, after the retreat of the Ice Age." When settlement occurred, grasslands were plowed and planted with crops. "So rather than buffalo roaming the grasslands, as they did before, we now have cows and we have a mower rather than fire to control the grass.
