As much as I enjoy the taste of butter, there is no denying the fact that this food is a food higher in saturated fatty acids. And...saturated fattty acids absolutely correlate with increased blood cholesterol, one of the major nurse risk factors for Coronary Heart Disease. As long as fat intake is sufficient to prevent fatty acid deficiency (which is true for your relative), there is no medically based reason to substantiate the idea that butter must be included in a healthy diet. If recipe quality is an issue, recipes from the American Heart Association (or in any heart friendly cookbook) could be useful.
